JUST 30 | Spicy Shrimp Tacos
Combining succulent shrimp with searing spices and tasty pico de gallo makes for a scrumptious dinner in just 30 minutes!
ingredients
1 pound large shrimp, peeled and deveined
4 tbsp. butter or oil
1 small yellow onion, diced
2 anaheim peppers, diced
tortillas
pepper jack cheese, shredded
pico de gallo
seasonings
2 tbsp. each of:
cumin, chili powder, garlic powder, salt, black pepper
1 tbsp. each of:
onion powder, oregano, cayenne pepper
toppings
feel free to add sour cream, rice, tomatoes, lettuce/cabbage, etc.

After peeling and deveining the shrimp (you can also buy deveined shrimp!), heat your butter or oil in a non-stick pan on medium-high heat.
Sprinkle seasonings over the shrimp (in a bowl) and mix until evenly coated.
When the pan is hot, place your onions in and saute for just a minute before adding the seasoned shrimp.
Allow each side to cook for two or three minutes, acquiring a nice sear on the outside, then turn down the heat to medium.
Incorporate the Anaheim peppers before placing a lid over the pan, allowing the peppers to soften and the shrimp to continue cooking.
This is a perfect time to cut up your toppings and shred your cheese!
Several minutes later, stirring occasionally, the shrimp is plump, juicy, and ready to be added to your warmed tortillas.
This is a quick and easy dinner that isn’t hard on a budget. When paired with Mexican rice, refried beans, or even chips and guac, this meal is hearty and filling.
